Gingernut Biscuit Recipe

Whilst I love traditional spicy Gingerbread Biscuits and they can be rolled and cut into any shape such as for a Photo Biscuit, sometimes I want a more simple and crunchy Ginger Nut style biscuit to dunk in my tea.

A hand made biscuit's always nicer than one from a packet and I've just been given a tried and tested recipe which I've just got to try this week. I thought I'd share it with you so you can have a go too....

Ingredients

340g self raising flour

225g caster sugar

1 tsp baking powder

3 tsp ground ginger

1 egg

115g margarine

60g golden syrup

Preheat your over to medium (about 180C). Melt the margarine and syrup together in a saucepan and meanwhile combine dry ingredients in a separate bowl.  Add the egg to the dry ingredients and stir to combine. Add the margarine and syrup mixture and stir. Place small balls of the mixture onto a baking sheet and cook for about 12 minutes or until starting to turn golden brown (they will still feel soft at this point). Leave on the tray to cool completely and eat with a cup of tea.

Black Cherry Fair

Yesterday was the day of the Black Cherry Fair and what a great day it was! The weather mostly held up and we chatted to lots of lovely people at our stall. The cupcakes sold out, everyone was intrigued to know what the cake pops were and we had a few squeals from teenage girls upon spotting the Justin Bieber biscuits!

Cake pops for those of you who don't know are balls of cake dipped in coloured chocolate and decorated to make them look extra pretty. They're very popular in the US and are starting to make their mark on the UK too, with Starbucks and Waitrose now stocking them (although theirs aren't as yummy as ours, obviously!) They were really popular with the little ones in particular yesterday and I'm sure you'll agree looked cute on our stall.

Here's a selection of the cake pops

The theme of the fair was musicals so we donated this gift basket for the raffle
